Our salmon is FRESH frozen vacuum sealed and will stay sushi fresh for up to 2 years. Freshness is rated by the time it takes between when it is caught and when it is processed.

All Alaska seafood is wild and sustainable, and it is managed for protection against overfishing, habitat damage, and pollution. In fact, record breaking seasons prove that Alaska’s management practices work and remains to this day the global model for sustainable fisheries management.
Every fishery is managed a little differently, but with supreme accuracy and preservation in mind.
In Chignik we have what is called a weir which is an underwater gate with underwater cameras. During the season fishery biologists will live at this location and count every fish going up river to spawn.
Once the biologists reach their “escapement goals” (a number that is in place to insure a plentiful harvest for seasons to come) in an allotted time period, they will open up fishing for hours, days, or weeks at a time. Fisherman will thus be fishing for the fish that is “left over” after a certain number of other fish have escaped up river. Fishing will open and close throughout the season accordingly.
