Last night we devoured some rockfish enchiladas. Actually this recipe from Alaskan Seafood Marketing Institute originally calls for Halibut but I used Rockfish instead and they turned out great. Any white fish will do. Kids love them and you will too. Easy, yummy, healthy. Enjoy!
